Check the Internal Temp: Chicken is safe to eat at 165°F (74°C), but wing meat actually benefits from higher internal temperatures—around 175°F to 185°F (80°C to 85°C). Because wings have plenty of connective tissue and fat, higher internal temperatures break down collagen, making the meat extra tender while the skin stays crisp.
