For the Beets:

  • 3 lbs medium red beets (greens removed, leaving 1 inch of stem attached)

  • Water for boiling

For the Pickling Brine:

  • 2 cups apple cider vinegar (5% acidity)

  • 2 cups water

  • 1 cup granulated sugar (adjust to preference: 3/4 cup for tart, 1 cup for balanced)

  • 1 tbsp canning salt (or non-iodized sea salt)

  • 1 stick cinnamon

  • 1 tsp whole cloves

  • 1 tsp whole allspice berries

Step-by-Step Instructions

Step 1: Cook & Peel the Beets

  1. Wash the beets thoroughly to remove dirt, leaving the skins, roots, and 1 inch of stem intact (this prevents the beets from “bleeding” out their sweetness and color while cooking).

  2. Place beets in a large pot, cover with water, and bring to a boil over high heat.

  3. Reduce heat to medium, cover, and simmer for 30 to 45 minutes, until tender when pierced with a fork.

  4. Drain and immediately transfer beets into a bowl of ice water. Once cool enough to handle, slip the skins off using your thumb—they should slide right off. Trim off the stems and roots, then slice or dice the beets into 1/4-inch rounds or bite-sized wedges.

Step 2: Prepare Your Canning Gear

  1. Fill your water bath canner with enough water to cover your jars by at least 1 to 2 inches. Bring to a simmer (around 180°F / 82°C).

  2. Wash your jars, lids, and rings in warm, soapy water. Keep the jars warm in the hot water bath until ready to fill to prevent thermal shock (cracking).

Step 3: Brew the Pickling Brine

  1. In a medium saucepan, combine apple cider vinegar, water, sugar, and canning salt.

  2. Tie the cinnamon stick, whole cloves, and allspice berries in a piece of cheesecloth (or use a tea infuser) and place in the saucepan.

  3. Bring the brine mixture to a boil over medium-high heat, stirring until the sugar and salt dissolve. Reduce heat and let it simmer for 10 minutes to infuse the spices. Remove the spice bag before filling jars.

Step 4: Pack the Jars

  1. Carefully remove hot jars from the bath.

  2. Pack the sliced beets tightly into the warm jars, leaving 1/2 inch of headspace at the top.

  3. Ladle the hot pickling brine over the beets, maintaining the 1/2 inch headspace.

  4. Run a non-metallic spatula or bubble remover tool down the inside edges of the jar to release trapped air bubbles. Adjust brine if needed to maintain headspace.

  5. Wipe the jar rims clean with a damp paper towel. Center the lids on top and screw the bands on until fingertip tight (do not overtighten).

Step 5: Process in Water Bath

  1. Using a jar lifter, lower the filled jars into the boiling water bath. Ensure the water covers the jar tops by at least 1 inch.

  2. Cover the pot with a lid and bring to a rolling boil. Process pint jars for 30 minutes (Note: Increase processing time by 5 minutes if you live between 1,000–3,000 ft elevation).

  3. Once the timer goes off, turn off the heat, remove the pot lid, and let the jars sit in the water for 5 minutes.

  4. Transfer jars to a towel-lined countertop and let them cool undisturbed for 12 to 24 hours. You will hear a satisfying ping as the lids seal tight!

Storage & Shelf Life Guide

Unopened Jars: Store sealed jars in a cool, dark, and dry place (like a pantry or basement). They will remain safe to eat and maintain peak quality for 12 months.

Opened Jars: Once a jar is opened, store it in the refrigerator. Consume within 3 to 4 weeks.

Flavor Development: For the best taste, allow the canned beets to rest in the jar for at least 3 to 5 days before opening so the pickling brine fully permeates the beets.
